Flavorful Veggies Over Pasta Recipe!

I wanted to try something different from what I usually make with pasta which is with meatballs or chicken. So I decided to use the vegetables that I picked up from the Virginia Farmer’s Market the other day!

Tomato, cherry tomatoes, red onion, green onion, zuchinni, and yellow squash.

I chopped up everything to prepare it for cooking.

I used a little olive oil and sautéed the red onions until they browned. I then added all the vegetables to the pan and added my spices. I used garlic powder, Italian seasoning, a little salt, pepper, fresh basil, and fresh rosemary.

I mixed everything together and covered and let it cook on medium heat for about 5 minutes.

Then I added marinara sauce to the pan, mixed it in, and put the temperature on low. I covered the on and let it cook for about 7-10minutes or until the veggies are soft.

Then I poured the veggie marinara sauce over tri-colored rotini pasta and garnished with fresh basil! I also enjoyed this meal with a nice and crispy piece garlic toast! Yum!

Tonight’s Dinner!

For dinner I made shrimp stir fry over fried rice!

I made a side of pork gyoza and you know those Cheddar biscuits that the give you for an appetizer at Red Lobster???

Well I bought the biscuit mix from my local grocery store and decided to make those with dinner too!

I’m proud of myself because everything tasted delicious haha!

Made Something New For Dinner!

I wanted to make something different for dinner last night. So I ended up making crab legs!

I’ve never made them before so I got an easy recipe from Pinterest on how to prepare them. Along with the crab legs, I also made shrimp pasta in a garlic lemon butter sauce, corn on the cob, and garlic bread!

It was a messy dinner with cracking all the crabs but it was fun haha and tasty too!

Something New For Dinner!

I love cooking salmon and wanted to try a new recipe I got from Pinterest!

I decided to make breaded salmon nuggets last night. It’s a very easy recipe! You cut up the salmon in chunks, and season them. Toast panko bread crumbs with a little olive oil and spices until gold brown. Cover salmon with flour, then egg, then bread crumbs. Bake them at 400 degrees Fahrenheit for about 20-25minutes or until the salmon is fully cooked.

I served it with pasta and marina sauce and everything turned out really good! I will make this again in the future! 😁

Delicious Impromptu Spaghetti Dinner Recipe!

I wanted to try out a meatless pasta dish for dinner last night. So I decided to create a yummy recipe! I didn’t really use exact measurements so I’ll try to do the best I can with providing all the info! Check it out!

Ingredients:

-Salt, pepper, garlic powder, Italian seasoning, red pepper flakes

-Olive oil or vegetable oil

-Spaghetti noodles

-2 cloves of garlic chopped

-1/3 of a red onion chopped

-Baby portabella mushrooms chopped

-Zucchini chopped

-Cherry tomatoes chopped

-Half can of tomato paste

-Half container of Marinara sauce

-Handful of baby spinach chopped

-2 tablespoons heavy whipping cream

-Chopped parsley for garnish (optional)

Directions:

I started out by cooking the spaghetti. As that cooked, I prepared the sauce. I chopped up garlic and red onions and added to a medium sauce pan. In 1 tablespoon of olive oil, I sautéed the garlic and onions for about 1 minute on medium heat.

I chopped mushrooms, zucchini, and cherry tomatoes and added to them to the pan and mixed together with the garlic and onions. I seasoned with salt and pepper and let cook for about 2 minutes.

I added half can of tomato paste and mixed in with the veggies and let simmer for a few mins to let the sauce thicken a bit. Added half can of marinara sauce and mixed all together. I seasoned with garlic powder, Italian seasoning, and red pepper flakes, covered pan, and let cook for 10 minutes on low heat.

I added about 2 tablespoons of heavy whipping cream to sauce and stirred in chopped baby spinach and let flavors blend for about 3 minutes. Fold in the cooked spaghetti and that’s it! Time to dig in!

I garnished with parsley and served with Texas toast garlic bread! I was very pleased that my impromptu recipe turned out really delicious!

Chicken Tikka Masala & Herb Roasted Carrots Recipe!

So last weekend I decided to try out 2 new recipes that my friend provided for me!

The first is Chicken Tikka Masala! I used boneless chicken breasts and cut them into cubes. I seasoned them with garlic powder, pepper, red pepper flakes, oregano, and basil. But what made the dish were the 2 sauces that were added!

The sauces were Tikka Masala Simmer sauce and Mango Ginger Chutney sauce! You can get both of these sauces from Trader Joes. They both smell so delicious on their own! I used about a cup of masala sauce and about 1/4 cup of the mango chutney sauce.

I cooked the chicken in a medium sauce pan until no more pink was visible. Then I added the sauces into the pan and mixed everything together. I covered the pan and let all the flavors simmer together on low heat for about 5-7 minutes. Once done cooking, I served over white rice, squeezed a little lime juice on top and garnished with fresh parsley.

The next recipe is for Thyme & Parsley Roasted Carrots! I shaved about 3-4 carrots and cut them in half. I seasoned them with salt and pepper and tossed them in about 1 tablespoon of olive oil. I organized them on a baking sheet and put in the oven at 400 degrees for about 20 minutes. Once the carrots were tender and began to get a little charred, I removed them from the oven. I tossed the roasted carrots in fresh thyme and parsley and squeezed juice from half of a lime over them. And that’s it! They’re ready to eat!

I actually didn’t have all the ingredients from my friend’s recipe so I improvised and it still turned out really tasty! Here is my friend’s recipe if you wanted it give it a try!

Honey Mustard Salmon Recipe!

Hey guys so I love eating salmon and wanted to try out a different recipe this time around. I decided to make Honey Mustard Salmon!

Ingredients:

-salmon filet

-olive oil

-3 cloves garlic (chopped or minced)

-garlic powder

-sea salt

-black pepper

-red pepper flakes (optional)

-dijon mustard

-honey

-soy sauce

-chives

Directions:

1. Rinse off salmon with cool water and pat dry with paper towel. Season both sides with seasonings.

2. In a bowl, mix Dijon mustard, honey, soy sauce, and garlic all together and set aside. I didn’t use exact measurements and kind of eyeballed how much to use.

3. Use medium skillet and add 1 tablespoon of olive oil and cook salmon skin side down on medium heat. Cover skillet and let cook for about 3-4 minutes.

4. Use spatula to flip salmon over. Glaze the salmon with some of the honey mustard mixture and cover. Save the rest of the mixture for later. Turn on low heat and let cook for about 2-3 more minutes. Make sure to watch closely.

5. Once salmon is done cooking, glaze again with remaining honey mustard mixture.

6. Top with chives and red pepper flakes (optional) and enjoy your salmon with a side of white or brown rice!
