Ingredients:
1/2 cup unsalted butter softened
1/2 cup white sugar
1/2 cup brown sugar packed
1 large egg
1 1/2 tsp vanilla extract
1 tbsp honey
1 1/4 cup all purpose flower
1/2 tsp cinnamon
1/2 tsp baking soda
1/4 tsp salt
1 cup quick oats*
1/2 cup old fashioned oats
*if you only have old fashioned oats, take 1 1/2 cups of the old fashioned oats, then remove 1 cup and put that in the food processor/blender. Give it 1-3 short pulses and now you have your 1 cup of quick oats!
Instructions:
-Preheat oven to 350 degrees, line your baking sheet with parchment paper, and set aside.
-In a large bowl, beat together the butter and both sugars until fluffy.
-Beat in the egg, vanilla extract, and honey
-With the mixer on low speed, beat in the flour, cinnamon, baking soda, and salt.
-Mix in the quick oats and the old fashioned oats
-Form the dough into balls about 1 tablespoon in size and place 2 inches apart on your baking sheet with parchment paper
-Bake in the middle rack for 9-11 minutes
-Cool the cookies on the baking sheet for about 5 minutes, then transfer to a wire cooling rack to finish cooling. Then enjoy!
Storing Cookies: you can store the oatmeal cookies in an airtight container at room temperature for up to 4 days, though they may get eaten before then! Haha!

So I found a spot literally right up the street from my place so I don’t know if this is a good or a bad thing lol. I might end up going there like everyday haha!
The place is called King Fu Tea and they serve milk tea, slushies, and other assorted drinks that have many flavors and add ons!
I usually order a milk tea with the flavored bubbles and I love it so much! I’m already a big tea drinker so this is like heaven for me!
I have to say that I enjoy this version of bubble tea more than my first bubble tea. Mainly because the first time, it had the chewy tapioca pearls which I’m not a fan of. This tea has the bubbles that are flavorful and have a nice pop to them!

So my hubby and I don’t really make it a big deal to celebrate Valentine’s Day. But we figured that this is our first V Day living in a new city, new home, new everything pretty much lol. So we wanted to take advantage of this holiday and celebrate!
We decided last minute that we wanted to try and go bowling. Unfortunately every place was packed so we just decided to stay home lol. And yes we’re being safe out there for those who are wondering lol.
We ended up ordering dinner from a nice local restaurant and ate it at home while watching a movie. We loved all the food that we ordered so we are definitely ordering from them again!!! Here are a few pictures of what we ordered!

I also told hubby that all he has to get me is a bouquet of flowers, I didn’t want roses because I wanted to be different lol. So check out what he got for me!
I loved it! And the strawberries were delicious too! Yum!
Funny story is that I planned to make my own chocolate covered strawberries so when I saw his strawberries I was surprised, but I definitely wasn’t complaining! Haha! Here are how my strawberries turned out!
I used Hershey’s chocolate to coat the strawberries. So delicious!
So I have to say that I enjoyed my V Day! Did you do anything for Valentine’s Day?!
Had a nice vegetarian lunch today. Veggie medley that included mushrooms, zuchinni, red onions, garlic with chickpeas. Added some chopped tomatoes, avocado, spinach all over brown rice. It was so delicious!
Lately I’ve been eating more sweet potatoes and sometimes I feel like eating them for breakfast!
For my sweet potatoes, I cut them up and leave the skin on for more nutrients. Then I boil them for about 10 minutes to soften them a bit. After I strain the water from them, I add my spices to it, which varies depending on how I feel for that day lol!
Today I added a very small sprinkle of pink Himalayan salt, cayenne pepper because I like spicy, roasted black sesame seeds, and chopped up dill! It is so delicious!
With my sweet potatoes, I had some of a green smoothie that I made the other day. Here are the ingredients:
Banana, carrots, pear, kale, capful of apple cider vinegar, hemp seeds, and water. This green smoothie is the bomb!

This morning I wanted to have some yogurt for breakfast but I ran out of granola! I thought to myself, maybe I can just make my own granola! So I looked up a simple recipe to make my own granola at home!
Here’s what you’ll need:
-3 cups OLD FASHIONED oats
-1 cup of nuts of your choice
-2 tbsp chia seeds
-4 tbsp of honey or maple syrup
-3 tsp vanilla extract
-2 tsp cinnamon
-3 tbsp coconut oil
Directions:
1. Preheat oven to 300 Degrees F.
2. Mix all ingredients together, put parchment paper on a baking sheet, and spread out a thin layer of the granola mixture.
3. Let it bake in the oven for about 20 minutes or until the granola starts to brown.
*Make sure to check the granola ever so often because it can burn easily.
Let it cool, then enjoy!
There are many fun ways that you can add this to a variety of dishes like:
Your favorite yogurt
As a topping for a baked apple
Add to muffins
Bake it in bread
Make granola bars
Eat with fruits
Roll bananas in the granola and freeze them
Add some sprinkles to a salad
Add to oatmeal for a nice crunch
Eat with mixed nuts
Place on top of a smoothie bowl or in your favorite smoothie
Your options are endless folks!
Storing your granola
You can store your freshly made granola in an airtight jar/container for up to 2 weeks long.
Or you can store in an airtight jar/container and keep in the freezer for a few months. When ready to eat it, just leave it on the counter to defrost overnight.

I wanted to try something different from what I usually make with pasta which is with meatballs or chicken. So I decided to use the vegetables that I picked up from the Virginia Farmer’s Market the other day!
Tomato, cherry tomatoes, red onion, green onion, zuchinni, and yellow squash.
I chopped up everything to prepare it for cooking.
I used a little olive oil and sautéed the red onions until they browned. I then added all the vegetables to the pan and added my spices. I used garlic powder, Italian seasoning, a little salt, pepper, fresh basil, and fresh rosemary.
I mixed everything together and covered and let it cook on medium heat for about 5 minutes.
Then I added marinara sauce to the pan, mixed it in, and put the temperature on low. I covered the on and let it cook for about 7-10minutes or until the veggies are soft.
Then I poured the veggie marinara sauce over tri-colored rotini pasta and garnished with fresh basil! I also enjoyed this meal with a nice and crispy piece garlic toast! Yum!
There is this popular ice cream shop in Virginia Beach that I’ve been hearing so much about!
It’s called Lolly’s Creamery. They offer delicious ice cream flavors and have a few toppings to choose from too. You can also order an ice cream float which I thought was pretty cool! I haven’t had one of those since I was a kid!
I ordered the mint chip ice cream with a waffle cone. I’m a big ice cream lover so I was in heaven!
