Jewel Of Himalaya!

My husband and I went on a dinner date with our friends at Jewel of Himalaya which is an Indian restaurant in Yonkers.

I’ve never been here before but I heard great things about the food so I was excited to give it a try! I ordered the Chicken Tikka Masala and Garlic Naan which are two of my favorites! The food was so delicious, I left the restaurant completely full and satisfied lol! The staff was very attentive, friendly, and made us feel super comfortable. If you’re in the area, you should definitely check out this restaurant!

Chicken Tikka Masala & Herb Roasted Carrots Recipe!

So last weekend I decided to try out 2 new recipes that my friend provided for me!

The first is Chicken Tikka Masala! I used boneless chicken breasts and cut them into cubes. I seasoned them with garlic powder, pepper, red pepper flakes, oregano, and basil. But what made the dish were the 2 sauces that were added!

The sauces were Tikka Masala Simmer sauce and Mango Ginger Chutney sauce! You can get both of these sauces from Trader Joes. They both smell so delicious on their own! I used about a cup of masala sauce and about 1/4 cup of the mango chutney sauce.

I cooked the chicken in a medium sauce pan until no more pink was visible. Then I added the sauces into the pan and mixed everything together. I covered the pan and let all the flavors simmer together on low heat for about 5-7 minutes. Once done cooking, I served over white rice, squeezed a little lime juice on top and garnished with fresh parsley.

The next recipe is for Thyme & Parsley Roasted Carrots! I shaved about 3-4 carrots and cut them in half. I seasoned them with salt and pepper and tossed them in about 1 tablespoon of olive oil. I organized them on a baking sheet and put in the oven at 400 degrees for about 20 minutes. Once the carrots were tender and began to get a little charred, I removed them from the oven. I tossed the roasted carrots in fresh thyme and parsley and squeezed juice from half of a lime over them. And that’s it! They’re ready to eat!

I actually didn’t have all the ingredients from my friend’s recipe so I improvised and it still turned out really tasty! Here is my friend’s recipe if you wanted it give it a try!

Mumbai Masala Indian Grill in NYC!

Hey guys! I went to dinner last night with my husband and our friend at this really nice Indian restaurant!

We shared all the food which consisted of Dal Soup, Chicken Tikka Masala, Murg Saag Chicken Tikka, Garlic Naan, and Coconut Rice! Everything was delicious!

Coconut Curry Chicken With Roasted Garlic Naan For Dinner!

I decided to make something new today!Coconut Curry Chicken!

Here are the ingredients:

-boneless chicken cut into chunks

-olive oil

-garlic powder, black pepper, red pepper flakes, curry powder

-white onions, green and red peppers, mushrooms, bokchoy, garlic, spinach all chopped

-grated ginger

-coconut milk

-store bought coconut flavored curry sauce

-1 lime


1. Marinate chicken in store bought coconut flavored curry sauce with a little bit of coconut milk for at least 30 minutes.

2. Heat up olive oil in medium skillet. Add white onions and garlic and cook for about 1 minute while stirring occasionally.

3. Add rest of chopped vegetables and season with salt and pepper and mix together.

4. Add marinated chicken to skillet with veggies and stir together.

5. Let mixture cook on low for about for about 5-7 minutes or until chicken is done cooking. Cover skillet with lid to keep in moisture.

6. Once chicken is done cooking, squeeze fresh lime juice on chicken mixture and stir together

7. Serve with white rice and naan bread. Enjoy!

This dish turned out really good, I’m proud of myself! Haha!

Asian Fusion Restaurant in Times Square NYC! 

I went out to dinner with my husband, his coworker and her boyfriend last night. They brought us to an Asian Fusion restaurant in Times Square!

The restaurant is called Nanjing and it’s located on W 51st street. Here’s our food! 

Chicken tikka masala to the right, chicken curry left, and chicken tikka masala at the top served with basmati rice and garlic naan bread! Yum 😋

If you’ve never had Indian cuisine, I highly recommend that you try it out! Definitely check this place out if your in Times Square! 

Fun Filled Birthday Weekend! 


Friday was my actual Birthday! Woohoo! And the first day of Fall! 
My husband took me to the Botanical Gardens for the first time! 


We ate at a lovely Indian Restaurant called Chutney Masala! OMG that food was extremely delicious! Everything was so flavorful!

Sweet and spicy shrimp in mango sauce with naan bread and dipping sauces. The shrimp were so juicy and filled with so much flavor!
Chicken tikkas braised in fengugreek scented in tomato cream sauce and coconut flavored chicken curry, tempered fennel and curry leaves with garlic flavored naan! Both dishes were absolutely amazing!


After dinner,  we headed to the movie theater to see Kingsman 2 which was a pretty good movie! The first Kingsman was crazy good too! 
I have to say that I truly enjoyed my birthday! ✨
