Salmon Topped with Creamy Cilantro Lime Sauce for Dinner!

Since it’s warming up outside, my husband and I decided to go for a run! We ran 2.4 miles and I’m so exhausted but it was worth it!

So for dinner, I made salmon with creamy cilantro lime sauce with a side of corn on the cob and veggie medley rice. I found this recipe on Pinterest and it turned out pretty good! I’ll add this recipe to my list of salmon recipes since I’m always running out of ideas lol!

Honey Mustard Salmon Recipe!

Hey guys so I love eating salmon and wanted to try out a different recipe this time around. I decided to make Honey Mustard Salmon!


-salmon filet

-olive oil

-3 cloves garlic (chopped or minced)

-garlic powder

-sea salt

-black pepper

-red pepper flakes (optional)

-dijon mustard


-soy sauce



1. Rinse off salmon with cool water and pat dry with paper towel. Season both sides with seasonings.

2. In a bowl, mix Dijon mustard, honey, soy sauce, and garlic all together and set aside. I didn’t use exact measurements and kind of eyeballed how much to use.

3. Use medium skillet and add 1 tablespoon of olive oil and cook salmon skin side down on medium heat. Cover skillet and let cook for about 3-4 minutes.

4. Use spatula to flip salmon over. Glaze the salmon with some of the honey mustard mixture and cover. Save the rest of the mixture for later. Turn on low heat and let cook for about 2-3 more minutes. Make sure to watch closely.

5. Once salmon is done cooking, glaze again with remaining honey mustard mixture.

6. Top with chives and red pepper flakes (optional) and enjoy your salmon with a side of white or brown rice!

My 3 Year Wedding Anniversary!

So yesterday was my 3 year wedding anniversary on January 22! But my husband and I have been together for a total of 8 years! I can’t believe it’s been that long! Time is surely flying by!

We went to BH Kitchen and Bar in Manhattan. I ordered their BH Burger and my husband, Danny, had chicken and waffles. The food was so delicious!

We’re sort of an unconventional couple so instead of going on a vacation or to a fancy dinner, we went to Dave and Busters! We played a bunch of games and we had a good ol time! We practically had the place to ourselves so that was a plus!

We ordered the Carnivore Pizzadilla appetizer, I had their Fire Grilled Salmon with Spicy Rice Medley and Sautéed Spinach and my husband had Bistro Steak and Shrimp With Lobster Alfredo Linguine (substituted for marinara sauce)! And for a bar/game play facility, they have really tasty food! Everything was so delicious! If you’ve never ordered food from Dave and Busters then you’re missing out!

We actually have a dining room table that converts into a pool table/ping pong table so we played each other in pool and ping pong when we came home. We’re pretty competitive so it was definitely a good game!

We may not have the house of our dreams, we may not have a house full of kids yet, we may not be able to travel all over the world, and we may not be as wealthy as we’d like to be.

But we have built a great life together so far, and we are grateful and blessed with what we already have. We have such a good relationship that keeps growing stronger each day and I can’t wait to see what the future has in store for us! 😊

Lemon Garlic Salmon with Lemon Rice Pilaf Recipe! 

All of the ingredients

Salmon Ingredients:

1 Salmon filet

1 garlic clove finely chopped

1 tsp finely chopped cilantro (or dried cilantro)

Garlic pepper or adobo or salt and pepper (you can use you favorite seasoning of choice) 

1/2 lemon 

Salmon Directions:

1. Season both sides with your choice seasonings and cilantro.

2. Squeeze juice of half of a lemon on both sides of salmon filet.

3. Put salmon in ziplock bag and marinate for at least 30 minutes. This step is optional but highly recommended for better flavor!

4. Turn oven on to 450 degrees Fahrenheit, wrap salmon in foil, put onto a baking sheet and leave in oven for 10 minutes.

5. Take out of oven and salmon should be a light pink color once it’s done. 

6. Let cool for a few minutes and enjoy!

Rice Ingredients:

1 1/2 tbsp olive oil or butter

2 cloves garlic finely chopped 

1/2 onion finely chopped

1 1/2 cups long grain rice (rinsed twice) 

1 1/4 cup chicken broth

1 cup water

1 larger lemon 

1 tbsp lemon zest

4 tbsp lemon juice

Salt and pepper 

1 tbsp finely chopped parsley (or dried parsley)

1 tbsp basil seasoning

Rice Directions:

1. Heat oil or butter over medium heat in a large saucepan or pot.

2. Add chopped garlic and onions. Cook for 5 minutes until translucent.

3. Stir in rice with the garlic and onions.

4. Add chicken broth and water to the rice and stir. Cover pan with a lid and bring to a simmer. Then turn heat on low.

5. Cook for 15 minutes or until water is evaporated. 

*If rice is not all the way done at the end of the 15minutes (which happened to me), sprinkle about 1/4 to 1/2 cup of water over the rice and mix around a bit. And let cook for about 5 minutes longer. 

6. Once rice is fully cooked, remove from stove and let rest for about 5 minutes with lid still on. 

7. Stir in the lemon zest, lemon juice, herbs, salt and pepper.

8. Now you can enjoy your delicious Lemon Rice Pilaf that you just made!
